The Bowl

There are two schools of thought when it comes to açaí: the São Paulo school, which treats it almost as a dessert — thick, sweet, buried under granola and banana — and the Pará school, the original, which keeps it savory, slightly salty, eaten with fish and farinha. João knows both traditions and has built his menu around respecting the original while serving the market he's in.

His base is sourced directly from a cooperative in Belém that João has worked with for seven years. The açaí arrives frozen in pulp form, never as a pre-sweetened mix, which means João controls the flavor profile himself. The result is a bowl with genuine depth — earthy, slightly bitter, cold in a way that hits differently after an hour in the Rio sun.

Toppings are fresh and local: sliced banana, strawberry, homemade granola (toasted in coconut oil), honey from a beekeeper in the Zona Oeste, and optional fresh coconut flakes. Nothing comes from a bag or a can.

The Operation

João runs two carts, both of which appear on his Aki profile. He's at the beach six days a week, starting setup at 8:30am. On weekends, he pre-sells up to 80 bowls through the app before noon to manage demand — walk-ups are first come, first served after that.

"Açaí is a Brazilian thing," he says. "But we got lazy with it. We started treating it like fast food. I just try to treat it with the respect it deserves."
